Cliona O’Connor Simple Summer Salad
Ingredients
- 1 cucumber
- 1 red chilli
- 2 tbsp sugar
- 2 tbsp white wine vinegar
- 1 tsp sea salt
- 1 head Romaine Lettuce
- 3 scallions sliced thinly
- 10 cherry tomatoes halved
- 10 grapes halved
- Halloumi cut into 6 slices
- 2 tbsp Olive oil
- 1/2 tsp Salt
- 2 tbsp Balsamic reduction
Method

Thinly slice & dice the chilli.

Slice the cucumbers finely.

Add to a bowl with the sugar, vinegar & salt. Mix and leave to pickle for at least 15 mins. Overnight is good also.

Wash the lettuce and slice lengthways.

Slice each half finely & place in a salad bowl.

Drizzle with olive oil, salt and balsamic reduction.

Toss to coat the leaves evenly.

Add the cherry tomatoes, sliced scallion and grapes on top.Add the pickled cucumber.

Gently fry the halloumi in olive oil for 2 minutes each side on a medium heat until golden.

Add to the salad and serve immediately.
